Seishi was born and raised in Kumamoto, Japan. After college, he worked at the Five Star Hotel Okura, where he soon became a manager. In 1968, Rocky Aoki (founder of the Benihana Restaurant chain) persuaded Seishi to come to the US and manage one of the first Benihanas in Chicago. Soon he was asked to move to Honolulu, Hawaii, and managed the new Kobe Japanese Restaurant chain.
The journey has been long and hard, but also rewarding. Seishi is finally fulfilling his lifelong dream of owning and operating his own restaurant: Miyama of Colorado. Your dining experience at Miyama will not only be enjoyable, but also memorable.
Seishi retired from day to day operations in 2011, although he continues to visit a few times a year to ensure business is running smoothly.
Seishi is very much here in thought and spirit as we run our daily business.
